La bola de chocolate blanco

1. Comience derritiendo 2/3 de taza de chispas de chocolate blanco, utilizando el método de baño maría. Mezcle suavemente el chocolate mientras se derrite lentamente para garantizar que todos los sólidos se licúen. No exceda los 120 °F.

2. Una vez que el chocolate esté completamente derretido, retírelo del fuego y mezcle 1/3 de taza de chispas de chocolate blanco para enfriar la mezcla. Agregue las chispas de chocolate revolviendo suavemente hasta que la mezcla esté suave y a aproximadamente 88 °F.

3. Una vez que el chocolate esté templado a 88 °F, agrega unas cucharadas de chocolate blanco derretido a tu molde de chocolate. Cierra el molde y gira suavemente la esfera hasta que todas las secciones del molde estén cubiertas. Luego, déjalo enfriar en el refrigerador durante 30 minutos. Dale la vuelta cada 2 o 3 minutos para asegurarte de que se enfríe de manera uniforme.

4. Mientras se enfría, corta un plátano por la mitad a lo largo y luego en diagonal en trozos más pequeños. Calienta unas cuantas cucharadas de mantequilla en una sartén antiadherente a fuego alto y agrega los trozos de plátano junto con una rebanada fina de bizcocho. Carameliza los ingredientes hasta que estén dorados por todos lados.

5.Una vez que el bizcocho esté dorado y crujiente, retírelo del molde.
Desglasar la sartén con 1/2 taza de ron oscuro. Agregar 1/2 taza de azúcar morena y una pizca de sal. Cocinar los plátanos durante otros 2 minutos a fuego alto y luego retirar del fuego y reservar hasta que esté listo para servir.

6. Si el chocolate ha tenido tiempo suficiente para cuajar, sácalo del frigorífico y desmóldalo con cuidado (ten cuidado de no manipular demasiado la bola con las manos, ya que podría derretirse). Para ahuecar un extremo de la bola de chocolate blanco, calienta el extremo inferior de un bol de pyrex y coloca la bola sobre el molde y deja que la base se derrita. Es posible que tengas que calentar el pyrex un par de veces, pero es importante que te tomes tu tiempo con este postre frágil.

7. Una vez que la bola esté lista para usar y la base esté ahuecada, comience a colocar el bizcocho crujiente. Cúbralo con las bananas caramelizadas al ron y una pequeña bola de su helado favorito. Estoy usando una vaina de vainilla clásica. Cubra con cuidado el postre con la bola de chocolate.

8. Por último, rocíe el jarabe de ron caliente restante sobre la bola de chocolate, observe cómo se revela su postre y disfrute de esta delicia sensual.
